Apple Pecan and Chocolate Cake

Makes 21 x 14 x 7 cm cake

INGREDIENTS
1 cup self-raising flour, sifted
½ cup caster sugar
2 tablespoons cocoa, sifted (*)
2 eggs, lightly beaten
½ cups oil
2 green apples, peeled and grated
⅓ cup pecans, chopped
2 tablespoon cocoa, extra (*)
2 tablespoon icing sugar

METHOD
1. Preheat oven to 180ºC. Brush a 21 x 14 x 7 cm load tin with melted butter or oil. Line base with paper; grease paper.
2. Combine flour, sugar and cocoa in a medium mixer bowl.
3. Pour combined eggs and oil onto dry ingredients; beat on low speed for 3 minutes until just moistened.
4. Beat mixture on high speed for 5 minutes or until mixture is free of lumps and increased in volume. Using a metal spoon, fold in the grated apple and chopped pecans; stir until well conbined.
5. Spoon mixture into prepared tin; smooth surface. Bake 45 minutes or until skewer comes out clean when inserted in centre of cake.
6. Stand cake in tin 10 minutes before turning onto wire rack to cool.
7. Dust cake with combined sifted cocoa and icing sugar, to serve.
